This is one of the simplest salads to make, and so tasty and refreshing! I had just gotten back from school and was so hungry, so I basically chopped up everything I had in my fridge, then mixed it together with my own zucchini dressing that I concocted on the spot! This is nut and oil free, so you can eat away to your heart’s content!
Let us begin!
In a large mixing bowl, chop up:
– 2 handfuls of spinach
– 2 handfuls arugula
– 3/4 package of sprouts
– 1 cup mushrooms
– 1/2 cup spring onions
– 3 tomatoes
– 1/2 cup banana peppers
– 1/2 cup celery
And mix with:
– 1/2 tsp turmeric
For the zucchini dressing, place the following ingredients into your blender:
– 3 to 4 chopped zucchinis
– 2 tbsp. nutritional yeast
– 1 garlic clove
– 1/2 avocado
– 1/2 small lime
– salt and pepper to taste
You can also add 1/4 cup pine nuts if you so desire. Blend the mixture together until it becomes smooth and creamy. Pour over the salad, mix and devour! That’s it! Simple, easy and soo good!
