Fried Rice, Egg, and Sausage with Veggies

Another quarantine 2020 recipe, made with ingredients available in the the store!

Another simple quarantine recipe, this time made with egg, turkey sausage, fried rice and some veggies, also known as whatever is available in the stores these days!

Thankfully in Austin the stores haven’t been that bad. Yes, most of the flour, bread, and sugar is gone, but there is still a lot of gluten free bread and flour available. For rice, a lot of it is gone too, but there are still packages available.

I recently discovered that the HEB off of Hwy 71 in Bee Cave is FULLY STOCKED with everything, and NO LINES! Austin peeps, if you don’t mind driving 15 minutes out of town, you should go to this store! It’s huge and has everything you need.

This recipe was made with the ingredients I could find at the HEB downtown. It’s so simple, easy to make and tastes delicious! It’s also a great departure from traditional American breakfasts, but still with familiar ingredients.

So without further ado…let us begin!

Makes 2 large servings

You will need:

  • 1.5 cups rice
  • 1 cup sliced turkey sausage (or any sausage your prefer)
  • 1 cup frozen veggies of your choice
  • 1/4 cup diced onion
  • 2 eggs
  • 2 garlic cloves
  • 2 tbsp oil

Optional:

  • avocado
  • chili oil
  • salsa

Step 1:

Cook the rice according to package directions

Step 2:

As the rice is cooking, sautee the onions and garlic, and in a pan with 1 tablespoon of oil. Add the sausage and cook till brown, then add in the frozen vegetables and cook, leaving a bit of a crunch to them.

When the rice is done cooking, add the last tablespoon of oil and the rice to the pan. Fry all together then remove from heat and plate.

Step 3:

Fry or cook the eggs the way you like them and place on top of the fried rice. For an extra kick add some chili oil or salsa on the top, and bits of sliced avocado on the side.

Serve immediately!

This recipe saves great in the fridge and you can warm it up for your breakfast or lunch the next day!
