Garlic Shrimp Pasta – Gluten Free!

I’m back from my Asia travels, and that means back to cooking! And wow, what a difference two months make! All my stuff is in storage, I had to make an emergency trip back home, I’m currently quarantined alone for 14 days because I’m considered “high-risk” from my travels, and I’m cooking in a random AirBnb apartment using whatever bowls and silverware are available to me at the place.

Also, I’m purchasing whatever is available to me at the store, which, to be honest is still quite a lot, but just different brands than what I would normally buy. I keep telling my readers that if you eat healthy, NOTHING that you normally eat will be out of stock, I guarantee you. There is still an abundance of fruit, vegetables and meat. Also, there is are still at TON of gluten-free products! And since I try to cook gluten free as much as possible, I was thrilled to find gluten free spaghetti noodles at the store!

This is a really easy recipe, with ingredients that you can easily find at your local supermarket, even during a pandemic. I’m using gluten free spaghetti noodles in the recipe, but if you fettucine or anything else your heart desires, feel free to substutitue it in!

So without further ado…let us begin!

You will need:

  • 1 pack (12 oz) gluten-free noodles
  • 1 pack (12 oz) raw shrimp
  • 1.5 cups chopped parsley
  • 2 cups frozen spinach
  • 4 garlic cloves
  • 2 tbsp butter
  • 2 tbsp olive oil
  • juice of 1/2 a lemon, about 2 tsp
  • salt and pepper
  • 2 tbsp or more parmesan cheese

Step 1:

Heat the water for noodles and cook according to package directions.

Step 2:

As the noodles are cooking, slice the garlic and sautee in a pan with the butter over medium heat. When the garlic is golden, add the olive oil, lemon juice and the shrimp. Cook until the shrimp turns pink, then add the parsley and spinach. Cook together about 2-3 minutes then remove from heat.

Step 3:

When the noodles are done, add to the pan and cook all together. Add more olive oil if you need more liquid.

Step 4:

Plate the pasta, top with parmesan cheese, and serve!

This dish will keep great in the fridge too!
