Tri Color Quinoa with Arugula Avocado Salad

Arugula is a green with a very strong taste, both initial and after. Because of this, it’s best used in salads, bowls and wraps rather than smoothies, mainly because of it’s overpowering flavor.

This quinoa salad makes the perfect combination for the arugula salad. The quinoa has it’s own flavor combination with the onion and corn, and the avocado mustard dressing with the arugula combines the bitter flavor with the more smoothing taste of the creamy avocado. If you are going to prepare this meal for the week, remember that mixing the dressing with the arugula can end up making the salad a bit soggy after a couple days. So it’s best to make a fresh batch of avocado dressing right before mixing it into the salad.

So without further ado…let us begin!

For the quinoa salad you will need:

  • 2 cups cooked quinoa
  • 1/2 cup corn
  • 1/2 cup diced red onion
  • 1/4 cup fresh chopped basil
  • 1 to 2 tbs lime juice
  • 1 to 2 tbsp olive oil
  • 1 tbsp sesame seeds

For the arugula salad you will need:

  • 1 bunch fresh arugula
  • 2 cups sweet baby peppers

For the avocado dressing you will need:

  • 1 fresh avocado
  • 4/5 tbsp stone ground mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp ground fenugreek
  • 1 tsp sesame seeds
  • salt and pepper to taste

Step 1:

In a large bowl, mix together the quinoa, corn, onion, basil, olive oil, sesame and lemon. Mix together thoroughly and set aside. You can also put it in a large container and place in the fridge, for the flavors to mix together as you work on the salad.

Step 2:

Slice the baby peppers and wash the arugula, then set aside.

Place the avocado in a large bowl and mash thoroughly until it is creamy. Mix in the rest of the ingredients with the mashed avocado until you have formed a nice, creamy dressing.

Next, add in the sweet peppers and arugula. Mix the salad around, scraping the sides of the bowl to get the dressing to spread around to the greens.

Step 3:

Once the salad is mixed, take the quinoa out of the fridge, add to a bowl and add some salad next to it. You can also mix the entire meal together if you like. Eat with a slice of lime and extra avocado if you want, and enjoy!
