Carrot Coconut Ginger Balls

This is a great snack not just for raw vegans, but everyone! The flavors are strong and perfect, and the snack is light and healthy! Be sure to save enough time for the freezing process before serving, as these balls can be rather gooey and mushy when not frozen.

Let us begin!

You will need:

– 1 1/2 cups carrots, peeled and chopped into small chunks

– 15 medjool dates, pitted and soaked in water for about 15 minutes

– 1/2 cup walnuts

– 1/2 cup dried cranberries

– 1/2 cup plus 3 tbsp shredded coconut

– 1 tbsp coconut oil

– 1 inch slide of fresh ginger

– 1 tsp cinnamon

OPTIONAL: 1/4 tsp turmeric

Step 1:

Put the walnuts into your high powered blender and blend on high until the nuts are ground into a fine powder. Next, add all the rest of the ingredients into the blender except the cranberries and 3 tbsp shredded coconut. Blend again, making sure to push down the sides of the blender so that the carrots will fully blend with the dates and coconut. Your mixture should resemble something like a thick batter.

Step 2:

Take your mixture out of the blender and put into a mixing bowl. Add the cranberries in, and fold into the ingredients:

Step 3:

Once the cranberries are mixed in, roll the mixture into bite size (or larger) balls. Put the 3 tbsp shredded coconut on a plate, and roll the balls in the coconut to coat them. Place the balls into a container when done, and put in the freezer to freeze for an hour:

Once the balls are frozen, take them out, serve and eat! These are great as a snack or dessert after a meal! So healthy and so good for you!
