Peppermint Bark

Much like my RAWmarkable Coconut Bark, this chocolate can be made by using fresh coconut meat and the coconut water! If you don’t have a fresh coconut on hand, this can also be done with full fat coconut cream, which can be found in any store. My raw vegan chocolates are some of the easiest desserts you can make, it only takes about 10 minutes of your time and has very few ingredients! I bring them as desserts to parties, dinners or to friend meetups, and everyone loves them!

If you are going to use peppermint oil, make sure it’s organic and edible, not a topical oil. you only need a few drops, but since you are ingesting it, you want to be sure it’s good quality!

So without further ado…let us begin!

You will need:

  • 4 tablespoons coconut manna or coconut butter
  • 1/2 cup coconut cream or the fresh meat of a coconut, blended with water to form a thick paste
  • 1 tablespoon cacao butter
  • 5 – 10 drops peppermint oil
  • 1 dropper full of coconut or regular stevia
  • 1/8 tsp vanilla
  • pinch of sea salt
  • a double boiler to melt all the ingredients together  (large wide pan filled with water on the bottom, smaller pot sitting inside)
  • parchment paper
  • 8 inch by 6 inch baking tray

Step 1:

Add all the ingredients except the stevia and peppermint oil into your double boiler. (If you don’t have a double boiler, use a small pot on your stove, and turn it to the lowest setting)

Slowly mix everything together until it is melted. Once the mixture is melted and blended together, add the stevia and peppermint drops. You can try adding about 5 drops first, then taste it. If you want it more pepperminty, then add more drops at that time.

Step 2:

When everything is mix together, remove the pot from the heat, line your tray with the parchment paper, and pour the mixture in. Put in your freezer to chill and harden, about 20 minutes.

After 20 minutes, remove the coconut chocolate from the freezer, break apart, add some mint leaves as a decoration, and voila! Your peppermint bark is ready to eat!

You will want to store this in freezer to keep it hard. When you are ready to eat it, take it out and let it sit at room temperate for about a minute to soften. After that, the bark will be the perfect chewy, rich, chocolatey consistency.

You can also try mixing in the mint leaves with the peppermint bark and freezing as well. Though you will have to eat the bark right away, as after a few days the leaves will brown and not look very pretty.
