This has easily become one of my favorite frozen mixtures. I had some leftover banana coconut milk, so I added in some pineapple, threw in some kiwis, and voila! Banana coconut kiwi popsicles!
For the banana coconut mixture, blend in your blender:
– 2 frozen bananas
– 2 tbsp coconut flakes
– 1 cup coconut water
– a bit of pineapple
Once the mixture is blended, set aside (or drink some, since there will be plenty extra, hehe) and peel:
– 2 ripe kiwis
Place them at the bottom of the popsicle mold, making sure to pack it in tight so that there aren’t any air pockets.
Slowly pour the banana coconut mixture over the kiwis, then set in your freezer to chill.
Take it out, and eat!
