I came up with THE BEST creamy, “cheesey” pasta over the weekend. The look and taste and smell is perfect, it’s filling, looks wonderful and is soooo good for you! There are many cashew cheese sauce recipes out there, but this is my own tried and true creation. I honestly have to say, it is the best one I have ever had! But then again, I am my greatest fan 😉
Let us begin!
For the cashew cheese sauce:
– 1 to 1/2 cups soaked cashews
– 1 clove garlic
– 1/4 cup nutritional yeast (for more information on what this is, see my blog about nutritional yeast)
– 2 tsp onion powder
– juice of 1 lemon
– 1/4 to 1/2 red bell pepper
– tsp sesame seeds
– 1/2 tsp tumeric
– salt and pepper to taste
– water if mixture is too thick
Optional cashew cheese sauce ingredients (I have used these in my sauces before and they come out equally great)
– 3 scallions
– 2 tbsp pine nuts
Soak the cashews for about 4 to 6 hours prior to blending. After that, add the cashews and the rest of the ingredients into your high powered blender. The mixture is really thick, so you will need a strong blender like a Vitamix or Blendtec for this one.
Pulse/blend the mixture until it is thick, smooth and creamy:
For the pasta, you will need:
– 3 spiralized zucchinis
– 4 or 5 (or more) mushrooms
– 1 tomato
– couple basil leaves
– about a 1/2 cup of leeks
Spiralize the zucchinis and slice the rest of the ingredients. Arrange in the large bowl, and start spooning on the cheese sauce! Your dish should look something like this:
And that’s it! You are done folks! You have just prepared one large, healthy, raw vegan feast for yourself! This is a dish all for yourself, so you can eat it guilt free! What other pasta dish allows you to do that?? Go ahead and take a bite!

This dish was so rich and wonderful and filling, I couldn’t even eat it all in one sitting! I couldn’t stop staring at it either, it’s so perfect looking! All raw, living, fresh, healthy foods! No cooking, no mess, no fuss. Simply gorg!
