Raw Chocolate Cashew Cream

 

I say “raw chocolate” because when you are eating 80% raw vegan, raw cacao powder is the only way to go…and besides, I prefer it! It is full of antioxidants and vitamins! So this is what I use for any and all chocolate flavored delights!

Because of the neutral flavor and texture of cashew nuts, they make the perfect base for any raw frosting or cream. You can play around wit h variations and actually come up with some really great ones! The sky is the limit on this one baby!

You will need:

– 2 cups soaked cashews (at least 2 hours, preferably 4)

– 4 to 5 pitted dates

– about 2 tbsp. raw cacao powder

– dash of cinnamon

– dash of nutmeg

Optional: 1 tbsp maca powder if you want a chocolate butterscotch flavor!

Place all the ingredients in the blender, and pulse away! The mixture will be extremely thick and creamy (as you can see from the picture), so you will have to start and stop the blender several times to scrape the sides and get the mixture going again.

Use as a frosting on a beautiful raw cake, or eat on its own! This will store in the fridge for several days.

      Hi there, and sorry for the delayed reply! Great question, and yes the water should be discarded. This is because the tannins in the nuts will now be in the water, and these are not good for you to consume. So go ahead and throw that water away!
