Salmon with mint chimichurri, cauliflower rice and salad with homemade dressing

I wasn’t planning on this quickie dinner to be a full blown recipe, but this came out amazing so I thought to add it to my blog!

The ingredients are simple, no fancy sides and you can buy pre-packaged salads and frozen cauliflower. Most of the work is in the mint chimichurri sauce and cooking the salmon, so focus on that, the rest is just side stuff.

That’s it, that’s all I’ve got! I always do love a recipe with a short intro. So without further ado…let us begin!

You will need:

  • Raw salmon of your choice
  • Salad mix of your choice
  • 1 bag of frozen cauliflower
  • butter and oil for cooking

For the chimichurri sauce you will need:

  • 1 cup fresh mint leaves
  • 1 cup fresh chopped italian parsley
  • 1 clove minced garlic
  • 1/3 cup olive oil
  • 1 tablespoon red wine vinegar
  • salt and pepper

For the salad dressing you will need:

  • 1/2 cup extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 to 3 tablespoons of mustard of your choice
  • 1 to 2 tablespoons of balsamic vinegar
  • pinch of sugar
  • salt and pepper

Step 1

First prepare the chimichurri. Mince the mint, garlic, and parsley and add to a bowl. Add the oil, vinegar, salt, and pepper and mix. Then set aside to marinate.

Step 2:

Next cook the salmon. Heat a pan in medium heat, add about a tablespoon of butter (depending on how much salmon you have), along with some avocado or olive oil to prevent the burning.

Place the salmon skin down on the pan and let it cook through until the skin is crispy. Then turn the salmon over, making sure there is still plenty of butter in the pan, and cook on the other side. Keep a watch on it until it hits the desired cook state. Remove from heat when done.

Step 3:

Add 2 tablespoons of butter to a pan and add the cauliflower in. Cook for a few minutes until golden brown. If you want to add anything to the rice like broccoli or cilantro, add it now. Cauliflower rice cooks very fast, less than five minutes.

Step 4:

Prepare the homemade dressing by mixing all the ingredients together. The more you whisk the dressing, the thicker it will become. The dressing will separate eventually, but it’s a great mix to add on top of your salad.

Plate the salmon, cauliflower rice and salad. Add the mint chimichurri generously on top of the salmon.

Serve immediately!
