Strawberry Macaroons!

These are THE best strawberry macaroons, and…made with fresh strawberries! Simple, easy and fresh!

Let us begin!

You will need:

– 1 1/2 cups organic shredded coconut

– 12 dates

– 1 cup strawberries

– 1/2 cup chopped strawberries

– 2 tbsp. coconut oil

– 2 tbsp. coconut butter

– 1 tsp vanilla

Optional:

2 tbsp. maple syrup, to substitute for some dates

Step 1:

Put the 1 cup strawberries, teaspoon of vanilla and 8 dates in your high powered blender.

Blend until the mixture is smooth and creamy. Once the mixture is blended, add it to your 1 1/2 cups shredded coconut. Mix it up and let sit for about 5 minutes. This is to soak the coconut into your strawberries, infusing the flakes with the pink color and strawberry flavor

Step 2:

Next, we are going to add the mixture to your food processor. Add the coconut oil, coconut butter and 4 more dates. If you are substituting the dates for the maple syrup, add the maple syrup in as well.

Pulse/blend until smooth, stopping at times to scrape the sides and make sure the mixture is fully blended. Once we have blended again, we will now go on to our final step, adding in the last half cup of strawberries:

Pulse blend for just a bit, making sure the strawberries are chopped up, but not completely pulverized in the mix. You want to be able to have small pieces of fresh strawberries in the macaroons!

Step 4:

Once the mixture is blended a final time, start spooning out the macaroons into a container. I am using a small tablespoon measure to even it out so that one side is flat and resting on the bottom, a la macaroon style:

Put in the fridge or freezer for a couple hours, then take it out and eat!
