Roasted Garlic and Chive Hummus

This one tastes soooo good! Ok, they all do, but some just have that little extra somethin somethin flavor…I’m also obsessed with chives and leeks, so that could also have something to do with it… 😉

Makes about 2 cups or so

– 1 1/2 cups chickpeas, soaked, boiled and drained (this also comes out to one 15 oz can of chickpeas)

– 1/3 cup garlic roasted in oven (To roast, you would spread on baking sheet, brush with olive oil, salt and pepper, and roast under broiler about 1 min)

– 1/4 cup lemon juice, or juice of 2 lemons

– about 1/2 a tsp of cumin (this is key for hummus. Never forget the cumin!)

– 1/3 cup chives

– 1 tbsp olive oil

Put all the ingredients in a food processor or blended, and blend until creamy. If you need liquid, you can add water, juice from canned chickpeas, tahini or olive oil. To keep it low fat or fat free, just use water. I’ve done water in place of olive oil and it comes out just as amazing!
