Raw Cashew Coconut Fudge

I had so much nut butter around my house from making raw cashew nut butter, so I decided to come up with an extra amazing delicous raw cashew butter fudge!

All you need is:

– 1 cup raw cashew butter, either homemade or store bought. (for how to make your own nut butters, see my blog on how this is done!)

– 3 tbsp organic coconut flakes

– 2 tbsp organic coconut butter

– 2 tbsp raw honey

– 1 tsp vanilla

In a double boiler (one pan with hot water and another pan inside the water with the mixture in that one) throw in all the ingredients.

As the mixture heats up, the nut butter will soften, the coconut butter melt and the flakes and honey will mix in together. Keep stirring until the mixture is thick, and mixed together smooth and creamy.

Remove the pot and put in a container, patting the mixture down to level it out.

Store in the freezer or fridge for a couple hours, then take it out and enjoy!

Perfection!

For a healthy butterscotch variety, add 2 tbsps maca powder to the mix in the pot, and blend together. Or you can half the portion to where one part is coconut vanilla as above, then add 1 tbsp maca powder to the other part, to make it coconut maca cashew fudge, like below:

Refrigerate or freeze for a couple hours, then take it out and eat it all!
