Cranberry Orange Macaroons

These raw coconut macaroons are soooo easy to make and they taste crazy good! Ten minute Preparation, no cooking, just blending and mixing!

Let us begin!

You will need:

– 1 1/2 cups organic shredded coconut

– 1 cup freshly squeezed orange juice (about 2 oranges)

– 6 organic pitted dates

– 2 tbsp. organic coconut oil

– 2 tbsp. organic coconut butter

– 1 tsp vanilla

– 3/4 to 1 cup dried cranberries

Optional: 2 tbsp. honey or maple syrup, if you want more sweetner

Step one:

In a small mixing bowl, add the 1/2 cups shredded coconut. Pour the orange juice into the bowl, and thoroughly mix the coconut flakes together with the juice. You want to make sure the flakes are saturated with the orange juice, so the orange flavor can mix in with the flakes. Let it sit for about 5 to 10 minutes.

Step 2:

After letting the coconut and orange juice sit, put the mixture into a food processor. Break up the dates into small pieces and add to the mix, along with the coconut oil, coconut butter and vanilla. Process the mixture thoroughly, stopping at times to scrape the sides and make sure everything is blended.

Step 3:

Add the cranberries to the food processor and mix together again. Once the cranberries are in, put the in a large bowl, and get ready to shape the macaroons:

Step 4:

Roll the cranberry orange balls into 1 inch bite size pieces. You can use a spoon to shape them, as one side of the macaroons will be flattened. Add them into containers and place into your freezer to harden, about 1 to 2 hours:

After the macaroons have hardened, take them out, and eat them! That’s it, super easy, and they taste soooo good!
