Coconut Cacao Clusters

I LOVE coconut…AND raw cacao. So rather than continuously buying expensive raw vegan cacao snacks at the store, I decided to make my own snack, and it came out delicious! This is a simple recipe made with only a few ingredients, and takes about 5 minutes of prep time.

Let us begin!

You will need:

– 2 cups dried organic coconut flakes

– 1/2 cup organic coconut oil

– 1/2 raw organic cacao powder

– 4 tbsp organic maple syrup (preferably grade b)

– 2 tbsp organic coconut sugar

– 1/2 tsp vanilla extract

To begin, melt the coconut oil, in a double broiler (a pot with the mixture inside a pot or pan of boiling water on the stove) on VERY low heat. Add in the cacao powder, maple syrup, vanilla and coconut sugar. Once the mixture is melted and blended together, add the coconut flakes:

Mix thoroughly until the coconut is saturated in the chocolate mixture.

Pour the mixture into a large container, and put in the fridge to chill for about four hours. Throughout this chilling process you will have to take the container out to mix the coconut and chocolate together. This is to prevent all the chocolate draining from the coconut and settling at the bottom.

After 4 hours, take out the mix. Your coconut cacao clusters should now be fully solidified and look something like this:

Break apart the mix to form little coconut cacao clusters. Serve on a plate, and enjoy! You can also mix this with dried fruit, berries, oats, bananas, or anything else to make this a little trail mix of sorts.
