“Cheezy” Baked Potato Chip Tacos!


When you eat vegan or raw vegan, you can have potato chips and french fries for dinner, lunch or even breakfast if you wish! For most people, following a fully raw vegan lifestyle just isn’t realistic or reliable. So it’s always good to have backup plans! I try to live by the Raw Till 4 lifestyle, and I have come up with great, tasty, amazing options for what would normally be a fatty, processed, not very healthy meal. Though tacos can be healthy, this is not the usual case, as most tacos are loaded with saturated fat with the meat, greasy cheese, beans cooked in pork fat and fattening cream sauces. This vegan recipe is a great healthy alternative for regular tacos, and…you can eat as much as you want!

So…let us begin!

For the potatoes you will need: 

– 5 pounds of uncooked, organic potatoes, any kind you wish (I used a mixture of sweet and red potatoes)

– 2 tbsp coconut oil

– 2 tbsp. nutritional yeast (if you are not sure what this is, see my blog post about it!)

– 1 tsp salt-free seasoning

– 1 tsp rosemary

– 1/2 tsp turmeric

– 1/2 to 1 tsp paprika

For the taco shells, you will need:

– 1 head of lettuce, either butter, romaine, red leaf, mingonette, etc. Anything that will make a good wrapping leaf

– 1 bunch fresh cilantro

– vegan peanut sauce

– any hot sauce mix of your choosing

Step 1:

Preheat your oven to about 400° Fahrenheit.

First, you want to wash then dice up the potatoes and add them to a large mixing bowl. Cut them in smaller bite-sized cubed piece, about a 1/2 at the most.

Next, melt down the coconut oil, then add the rest of the ingredients to the pan. Pour this mixture over the potatoes and mix together, making sure the potatoes are fully coated.

Add them to a greased pan, making sure they are distributed evenly


Bake at 400° for about 20 minutes, making sure to take the tray out to mix the potatoes around so that they bake evenly. Take them out of the of the oven and let them cool for about 5 minutes. The potatoes should be golden brown and crispy looking


YUM!! It’ll be hard, but try not to eat them all before your tacos are fully prepared!

Step 2:

While the potatoes are cooking or cooling, take apart the head of lettuce to wash the leaves, as well as the bunch of cilantro. If you choose to, prepare some some dipping sauces for your tacos. I use a gluten and vegan peanut store-bought peanut sauce, along with my own homemade salsa and some sweet chili sauce. Lay them out on a plate together, and let the feasting begin!

Now, to create tacos: Take a large leaf of lettuce, add some potatoes in, a couple leaves of fresh cilantro, and top with a sauce of your choosing:



Take a bite!

Wrap up the lettuce leaf and take a bite! You can mix the sauces, or try one taco each with a different sauce. What ever you want really! When you are a vegan or raw vegan, you want to stay carbed up! This meal is low fat, salt free and contains about 40 grams of protein! Not to mention the great health benefits of fresh cilantro and lettuce, such as its detoxification properties, an aid to lower diabetes, heart disease, and promote healthy skin, hair and metabolism!
