After the success of my orange cranberry macaroons and then strawberry, I knew there was only one other flavor I HAD to try immediately, and that was cocoa! One try and I nailed it, and they were a huge hit with my friends and sisters. So, here is my awesome recipe for it!
Let us begin!
You will need:
– 1 1/2 cups organic shredded coconut
– 4 tbsp. raw cacao powder
– 2 tbsp. coconut oil
– 2 tbsp. coconut butter
– 1 tbsp. raw cacao powder
– 8 dates (soaked in water for about 1 hour prior)
– 4 tbsp. maple syrup
– 1 tsp vanilla
Mix the coconut and cacao together in a mixing bowl. In a double broiler on LOW heat, melt together the coconut butter, coconut oil and cacao powder. Remove from heat and pour into the coconut and cacao. Once the mixture is blended together, put it in your food processor.
Add the dates, maple syrup and vanilla, and pulse/blend until everything is mixed together thoroughly. Take a tbsp. measurer and begin scooping out the mixture onto a tray:
This should be fairly easy as the mixture should slide right out of the tablespoon mold.
Put in the freezer for about 1 hour, then take it out and eat!
Yummm! So so good!
Note: You can also make these without dates and cacao powder, as pictured below. Add 1 more tablespoon maple syrup in place of the dates, and that’s it!
