Basically the same as zucchini hummus, except you add a half of an avocado in the mix and/or cilantro. This tastes amaaaazing!
– 2 organic zucchinis (you can peel them or leave the peel on)
– 1/4 cup pine nuts
– 1/2 of an avocado
– 1 clove garlic
– 1 tbsp fresh lemon juice or juice of one medium lemon
– 2 tbsp nutritional yeast
– 1 tsp cumin
– salt and pepper to taste
Optional:
– 1 or 2 tbsp organic miso paste
– 1/4 cup finely chopped cilantro
Blend all the ingredients in the blender. You will have to stop and start the blender to get it to fully mix, or if you have a Vitamix, push down the ingredients with the push/mixing tool.
Chill in the frige for a bit and then serve!
This also makes a great raw soup or vegetable dressing
