Banana Zucchini Muffins – Gluten Free!

Keeping up with the breakfast muffin trend, when my sister asked me to make some healthy breakfast muffins, I originally went with banana zucchini. However, my idea to use coconut flour in the muffins just didn’t turn out well. The muffins were dense, did not cook fully and were just a disaster. The taste however, was great! So I modified my original (unusable) recipe to include gluten free flour, and well, they turned out great!

These muffins work wonderfully as an addition to your breakfast or an afternoon snack. Try it and see how you like it!

Without further ado…let us begin!

You will need:

  • 5 large bananas. They need to be VERY ripe and spotty, and all mashed together
  • 2 cups shredded fresh zucchini
  • 2 cups gluten free flour
  • 1/2 cup brown or coconut sugar
  • 2 tbsp flax seed
  • 4 tbsp water
  • 2 tbsp coconut oil
  • 1 tsp cinnamon
  • 1.5 tsp baking soda

Step 1:

Preheat your oven to 350 degrees

Prepare your flax egg in a cup. Add the tablespoon of ground flax seed along with the 2 tablespoons of water. Mix together and let stand while you mix the rest of the ingredients.

Step 2:

Use a large mixing bowl to mix all of the dry ingredients, and a small mixing bowl to mix all of the wet ingredients. Before adding the wet ingredients to the dry, add in your flax egg to the wet ingredients and stir. Then, add your went ingredients to the dry and mix thoroughly.

Step 3:

Grease your muffin tins, and spoon the mixture into each of the molds. You shouldn’t add more than 1/4 a cup to each mold, as the mix will rise while baking

Step 4:

Once all the molds are filled, add the muffin mix to the oven and bake for about 45 minutes, till the muffins are golden brown at the sides and a toothpick comes out clean. Let the muffins cool for about 5 minutes, then transfer to a wire rack to cool further. This is important, as you will end up with soggy muffin bottoms if you don’t allow the air all over the muffin to cool.

Once the muffins are cool, you can then eat! Use as a breakfast side or a delicious afternoon snack!

….As did my nephew. He couldn’t keep his fingers away while I was trying to take photos! These muffins are also a great way to get some extra vegetables servings in to your kid’s food, or yourself for that matter!
