I love fudge. One of my favorite things to do when visiting small country towns in Texas is to go to the local fudge shops and try their homemade fudge. Of course, conventional fudge is all butter, cream and sugar. And I’m not gonna lie, that’s what makes it taste so good! But just because it tastes good, doesn’t mean you should eat. And just because it’s not vegan, doesn’t mean you have to skip out completely!
Enter my raw vegan maple walnut fudge! These candies are a little harder than fudge, but bursting with flavor and full of healthy ingredients like coconut oil and coconut cream, instead of butter and sugar. This a great snack to keep on hand in your freezer if you are craving something sweet. And you do want to keep it in your freezer, or else it may get a little too soft.
So, without further ado…let us begin!
You will need:
- 1 small cooking pot
- 1 small tray or glass container, lined with parchment paper
- 1/4 cup walnuts
- 3 tbsp full fat coconut cream (this is done by buying 1 can of full fat coconut cream or milk, then scooping out the top thick part–more details below)
- 2 tbsp coconut manna or coconut butter
- 1 1/2 tbsp organic maple syrup
- 1 tbsp coconut oil
- pinch of Himalayan sea salt
For the coconut cream: Buy a can (or 2, to be safe) of full fat coconut cream or milk (lite or fat free milk or cream will not work as it is too thin. Best to stick with full fat) at your local store.
Put in fridge overnight or for an hour. After refrigeration, take out the can, open, and scoop out the top part, which will have separated from the more liquid coconut milk at the bottom. This is the coconut cream that will be used for our candy! One can more than enough for this recipe.
Put your pot on the stove and turn on the lowest heat setting. Add in all your ingredients except the walnuts and stir, making sure everything is melted and mixed together thoroughly.
Pour the melted mixture into your tray lined with parchment paper, making sure everything is evenly spread around. Next, take your 1/4 cup walnuts, crush them up a bit in your hands, and sprinkle on top of the liquid fudge. You can make half the tray with nuts and the other half without if you want:
Then, put in the freezer for about 20 minutes.
After 20 minutes, take it out, break it apart into bite size chunks, and eat! This is the simplest fudge you’ve ever made!
You can serve both the maple candy and the maple walnut candy so that there are two different options with each!
