The holiday season is here, and with that comes pumpkin flavored everything! A couple years ago I made a raw vegan sweet potato and pumpkin pie which is still a holiday favorite to date! This year, I am going to be making a couple pumpkin things, but to start off, how about a pumpkin pie smoothie bowl! This is like a pumpkin pie in a glass, except without all the fat and animal products. This can be great as a snack or a raw vegan meal!
So, let us begin!
You will need:
- Four frozen bananas
- 1/2 cup pumpkin puree
- 1 tbsp coconut sugar
- 1/2 tsp pumpkin pie spice
- 1/2 tsp vanilla
- one to two cups nut milk
Optional:
- if you like, add in some coffee (instant or 1/2 cup cold brew)
- and 1 scoop protein powder
Put all the ingredients together in your high powered blender, and blend on high until everything is full mixed together. This is going to be a thick mixture as you are making a smoothie bowl, but if you want a thinner, more drinkable smoothie consistency, add in some more water, coffee or nut milk.
Pour out, put into a bowl, and serve!
