Yes, fall is here and that means pumpkin everything! If you love pumpkin, then stay tuned for some great vegan pumpkin recipes coming your way, starting with this wonderful pumpkin protein smoothie!
While, yes, it may not be the most appealing thing to have a cold smoothie on a cold morning, this pumpkin smoothie is an exception, based on the fact that you are basically eating a healthy pumpkin pie for your breakfast! Additionally, if you are living in a warmer place like I am, enjoying a cold smoothie for breakfast is perfectly acceptable. Mornings here in Texas can still be in the 70s, so it’s a great time to get some refreshing smoothies in while still enjoying that holiday flavor!
With this smoothie, you can use any type of protein powder you want. I personally like Groud-Based Nutrition Organic Superfood Blend, or Sunwarrior Vegan Protein Powder. However, any protein mix you choose will work!
So without further ado…let us begin!
You will need:
- 2 cups pumpkin seed milk (to learn how to make your own pumpkin seed milk, click this link)
- 1 cup pumpkin puree
- 1 tsp pumpkin pie spice
- 2 tbsp hemp seeds
- 1/4 tsp vanilla
- 3 frozen bananas
- 1 scoop protein powder of your choice
- dash of cinnamon
Put all the ingredients in your high powered blender, and blend on high for about 1 minute. If you need to add more milk or want to add more pumpkin puree, feel free to do so. The more the merrier!
Once everything is blended together, pour into a large glass, top with some cinnammon and drink up!
