Mexican Breakfast Tacos

I’m back again, this time with a delicious and easy Mexican Breakfast Taco recipe, just how I ate my food whe living in Mexico and Guatemala!

These are legit breakfast tacos, made with fresh tortillas, refried beans, and of course, queso fresco. This is probably the easiest recipe meal on this website, made at the last minute for breakfast, and I didn’t even mean to make it into a recipe, hence the photo quality. But it came out so good, it’s so easy and a nice vegetarian option, so now it’s on my blog!

Settle in and let’s begin!

You will need:

  • pack of tortillas (any size)
  • 4 eggs
  • avocado or olive oil for cooking
  • 1 pack of queso fresco (or about 1 cup worth)
  • 1 can of black refried beans, or you can make them yourself
  • 1 sliced avocado
  • hot sauce

Step 1:

Crack the eggs, whisk them together and put them in your pre-heated pan with oil. Cook while whisking or fold the eggs into itself to scramble them.

As you are doing this, make sure there is another pan going that is heating up the refried beans.

Step 2:

In another pan or skillet, heat the tortillas over medium heat, making sure not to burn or overheat them to where they become too crispy and unable to fold.

Step 3:

Once the eggs are cooked and the beans heated, all you need to do is make the tacos!

Put a heated tortilla on a plate, add a generous amount of eggs, then top with refried beans. Crumble the queso fresco on top, then top with sliced avocado. If you want, drizzle with hot sauce at the end. You are done! You now have delicious Mexican breakfast tacos!

This is such a delicious breakfast, easy to make and filling as well. You can adjust the amount of the eggs as much as you want, as well as the beans to accommodate for the amount of people you are cooking for.

You can also experiment by trying the tacos with brown refried beans, or another bean of your choice!
