This is a great vegan recipe for “cheezy” noodles and veggies. Quinoa noodles are packed with protein and are prepared just like regular noodles. Kale is one of the most nutrient dense green vegetables on the planet, packing in vitamins K, A, C, contains iron, calcium, protein, is low in calories, high fiber and zero fat! Our “cheezy” flavor comes from the addition of nutritional yeast. If you don’t know what that is, see my blog post, “What in the World is Nutritional Yeast?”
Let us begin!
You will need:
– 1 fresh bunch of organic kale
– 1 clove chopped garlic
– 1 tbsp coconut oil for cooking
– 1 package organic quinoa noodles (8 oz)
– 8 cups boiling water
– 2 tbsp nutritional yeast
– 1/2 tsp red pepper flakes
– 1/4 tsp turmeric powder
– bit of salt and pepper to taste
First, you are going to boil the water to cook the quinoa noodles, following the instructions on the package. Add the quinoa to the boiling water and cook uncovered for about 6 to 9 minutes. Do not overcook quinoa noodles! They will become mushy and stick together! Drain the noodles, rinse with cold water and add to a bowl for mixing with the kale.
Next, chop up the garlic clove and fry it in the coconut oil. Once the garlic is browned, rip up the kale leaves and add to the pan.
Flash-saute the kale with the garlic and coconut oil for a couple minutes, then remove from heat and add to the bowl with the quinoa noodles. Add in the red pepper flakes, nutritional yeast, turmeric, salt and pepper. Mix together thoroughly.
And that’s it, you are done! Add to a bowl, and dig in!
You can also add tamari sauce (soy sauce) for additional flavor, or hot sauce for an extra kick.
