Cauliflower rice is my fave. And, since I am obsessed with turmeric and nutritional yeast, I decided to make my own version of a cheesy rice dinner plate. Recipe is so simple, tastes delicious, and you can eat as much as you want!
Let us begin!
For the cauliflower rice mix, you will need:
– 1 head of organic cauliflower
– 2 cups of sliced mushrooms
– 2 1/2 cups thinly sliced leeks
– 1/2 cup nutritional yeast
– 1 tsp turmeric
– bit of salt and pepper to taste
– 2 cloves garlic
First step is to mix 2 cups of leeks with 2 cups of mushroom in a bowl:
We will then let it sit and marinate in a mixture of:
– 1 tbsp. balsamic vinegar
– 1 tbsp. raw honey
– 1 tsp fenugreek
– bit of salt and pepper
While the leeks and mushrooms are marinating, we will chop up our cauliflower and throw it all in a food processor, and process it until the cauliflower has a rice-like consistency:
I like to include the cauliflower leaves as well, just for added color. Plus, they are good for you!
Once all the cauliflower is processed, we are going to sauté the remaining 1/2 cup of leeks along with the 2 cloves of garlic, until they are golden brown, or for about 5 minutes or so:
Next, we will add in our cauliflower rice and the leek and mushroom marinade, and sauté that for about 5 minutes or more, depending on how cooked you want your rice to be:
Once the cauliflower is sautéed, our last step is to add in the 1/2 of nutritional yeast and our teaspoon of turmeric:
We will then sauté that for 5 minutes more, to mix everything together and to get that “cheesy” effect for our rice. Once that is done, remove from the heat and serve!
Garnish with cilantro, cherry tomatoes or whatever you want. This is a great side dish or you can eat it as a whole meal. Simple, easy and delicious!
