RAWmarkable Zucchini Pasta with Marinated Mushroom Sauce
One of my favorite raw vegan meals! So far it’s a toss up between this one and my RAWmarkable Vegan Lasagna. This meal is packed with protein, vitamins and minerals from the zucchini, leeks, mushrooms and hemp seeds. The list is endless!
There are several steps to this recipe, so let us begin!
First, we are going to marinate the mushrooms for our marinated mushroom sauce. You will need:
– 1 pkg of organic mushrooms, sliced (about 2 cups)
– 1 cup thinly sliced organic leeks
– 1 to 2 cloves garlic, thinly sliced
– handful of cilantro, sliced
– 2 tbsp balsamic vinegar
– 2 tbsp honey
– 1/2 tsp tumeric
– 1/2 tsp finely ground fenugreek
– salt and pepper
Mix all the ingredients in a bowl and cover. Let sit while the mushrooms marianate for a couple hours. This may seem like a lot of moisture for the mushrooms, but remember, this is the sauce for an entire meal! So it ends up working quite well
This marinated mushroom sauce can also be eaten as a plain salad too! The taste is incredible on its own!
For the zucchini salad, you will need
– 3 spiralized organic zucchinis, or grated if you don’t have a spiralizer
– 2 handfuls spinach
– 2 tbsp hemp seeds
– 2 tbsp nutritional yeast
Optional: 1 avocado or 1 tbsp of olive oil
Put the zucchini and spinach in a bowl. Once the mushrooms have been marianated long enough and are completely saturated in the mixture, pour on top of the zucchinis and spinach. Top with the hemp seeds, nutritional yeast and a sprinkle of tumeric.
If you want, you can mix in the avocado or olive oil in with the salad to give it an even more creamy texture.
