Watermelon Radish Salad with Basil and Mint


Refreshing Watermelon Radish Salad with Mint and Basil

This is a great salad as a snack, or to eat as a meal! It has an amazing flavor from the mint and the basil, and it is especially refreshing once it has been chilled in the fridge for awhile.

This makes about 6 cups or so

– 4 cups diced watermelon

– about 1 cup thinly sliced radishes

– 3/4 cup chopped cauliflower

– handful of basil

– large handful of mint

– 2 tbsp lemon juice

Optional: 2 tbsp olive oil

Mix all the ingredients together in a bowl, and refrigerate for an hour or until cold. Serve as a side salad, snack or make enough for a meal!
