Mushroom Sprout Spring Salad!

EAT YOUR COLORS!

This is a beautiful salad that you can make as a meal or a side salad. I basically threw a bunch of stuff into a bowl, mixed it with an avocado and voila! Spring time salad success! Let us begin!

In a large bowl, add:

-1 to 2 cups sprouts

-About 5 to 7 thinly sliced mushrooms

– 1 to 2 cups red, green and yellow bell peppers

– about 1/2 cup cilantro\

– 1 cup arugula

– couple chopped up chives

– 2 tbsp hemp seeds

– 1/2 avocado

– 1 to 2 tbsp nutritional yeast

– 1 tsp tumeric

– salt and pepper to taste

Mix everything up in the bowl, making sure that the avocado, hemp seeds and nutritional yeast mixes in with everything, as this is the “dressing” for the salad.

Serve immediately and EAT IT ALL! If you are eating this as a meal, you can actually double or triple everything in the list! Except for the avocado, hehe. This is an amazing salad and the colors are so vibrant and cheery!
