Vegan Pad Thai with Rice Noodles


With the cold weather coming, it’s time to start preparing some hot vegan dishes! Pad Thai is such a great dish, BUT, it’s cooked in butter, vegetable oil, added sugar and meat. This vegan Pad Thai can work either as a soup or stir fry dish. The addition of the mushrooms, broccoli and tomato gives it some extra flavor, color and texture. Much better than animal flesh! This dish is also made with rice noodles, so it is gluten free as well!

So…let us begin!

You will need:

  • About 6 oz rice noodles (about a handful)
  • 5 cups water
  • 2-3 cups vegetable broth
  • 1 large tomato (I used an heirloom tomato, but you can use any kind you wish)
  • 1 cup chopped broccoli
  • 1 cup sliced mushrooms
  • 1/2 onion
  • handful of cilantro
  • 1 large or two small garlic cloves
  • 2 tbsp coconut oil
  • 2 tbsp tamari sauce
  • 1/2 tsp chili paste


  • 1/2 tsp turmeric powder or a small nub of fresh turmeric
  • 1 tsp teriyaki

Step 1:

First, you want to soak your rice noodles. Put the noodles in a bowl or container, and add the 5 cups water. Let them soak for about 15-20 minutes, or according to the directions on the package. While the rice noodles are soaking, use this time chop up all of your vegetable ingredients

Slice the mushrooms, cilantro, onions and garlic, and chop the broccoli and tomatoes into bite size pieces

Step 2:

Once the vegetables are chopped, put your stove on medium high heat and add 1 tbsp of the coconut oil in a small pot. Saute the onions and garlic first until golden brown, then add in the other tbsp of coconut oil, mushrooms and turmeric. Saute again for a couple minutes.

Step 3:

Once the onions, garlic and mushrooms are browned, add in the vegetable broth, tamari sauce and chili paste. Drain the noodles, and add that to mix as well. During this time, you will notice that the broth becomes less soupy, and more like a thin sauce.

Let the noodles cook for a few minutes until tender

Step 4:

When the noodles are almost done, add in the broccoli and tomatoes. You only want to cook them for a couple minutes, as you want the tomatoes to still be in pieces and the broccoli to still be crunchy.


Step 5:

After the tomatoes and broccoli are mixed in with the rest of the noodles, cook for only a couple minutes. Make sure everything is fully mixed together. After a couple minutes, remove from the heat to let cool. The broth should be almost completely gone, replaced with a flavorful vegetable sauce!

And that’s it! Put in a bowl, top with some fresh cilantro leaves and red pepper flakes, and eat!
