Balsamic Roasted Brussels Sprouts, Broccoli and Mushrooms

IMG_1475Much like my Roasted Brussels Sprouts and Quinoa  dish, the main flavorful ingredient in this dish is the balsamic vinegar. It gives the vegetables such a good taste, and makes it a perfect roasting condiment! This recipe is so simple, and I usually eat this all in one sitting for a meal!

So…Let us begin!

You will need:

– 1 bunch organic broccoli

– 1 to 2 packages fresh Brussels sprouts (about 3 to 4 cups)

– 1 package organic mushrooms, sliced (about 2 to 3 cups)

– 2 cloves minced garlic

– 2 tbsp. sesame seeds

– 2 tbsp. balsamic vinegar

– 2 tbsp. avocado oil

– 1 tsp pepper

– bit of salt

First, in a large bowl, mix together the balsamic vinegar, avocado oil, minced garlic, sesame, salt and pepper. Next, rinse the Brussels sprouts then peel off the outer leaves. Cut them in half lengthwise and add to the bowl. Rinse the broccoli, cut the stalks into small lengthwise pieces and add. If your mushrooms are not sliced, go ahead and slice them lengthwise and add to the bowl as well. Make sure the vegetables are fully coated in the mixture, and you can even leave it sitting to marinate for a bit.

Next, pour the vegetables on a tray, making sure they are evenly distributed. Roast the vegetables at 350° for about 15 minutes. You can take the tray out and mix them so that they are evenly roasted.

When the vegetables are done, take them out and eat! You will love the flavors from this dish, with such simple ingredients and cook time!
