Split Pea Hummus

splitpeahummus2I love making hummus out of any bean that is available to me, and I also LOVE the taste of split peas. Split peas are already creamy with an excellent strong flavor on their own, so I didn’t find the need to make this hummus any other flavor except enhancing what split peas already have. This is a basic recipe with only a few fresh herbs to bring out the flavor.

Let us begin!

You will need:

– 2 cups cooked split peas (1 cup split peas to 3 cups water, boiled for about 20 minutes)

– 1/4 cup water

– 2 tbsp olive or avocado oil

– juice of 2 fresh limes

– 1 clove fresh garlic

– 1 tsp. salt

– 1/2 tsp cumin

– 1/2 tsp pepper

– 1 fresh bay leaf or 1/2 tsp crushed bay leaves

Optional:

– 1 tbsp nutritional yeast for extra flavor

– 1/2 tsp turmeric

Blend all the ingredients together in your high powered blender. You will have to stop and start the blender while pushing down on the sides to make sure all the beans are blended. If the mixture is too thick, add water for blending. Mixture will be thick and creamy.

Put into a bowl, top with additional olive or avocado oil and sprinkle with crushed red pepper. Eat with your favorite veggies and chips.
