Simple, Delicious and Nutritious Quinoa Dishes

quinoaQuinoa is one of my favorite things in the whole world. Not only does it taste amazing as a sweet or savory dish, but the health benefits of this grain (which is technically a seed, actually) make it supergrain of all grains! Quinoa is gluten free,  it is a complete protein, and is a great source of iron, calcium, magnesium, copper, fiber, riboflavin, manganese and lysine. It is a vegan’s best friend, and one of the main culprits as to why I can never go fully 100% raw vegan! I am just too much in love with this grain to let it go!

Below are some of the simple, amazing dishes I have created with quinoa. They take about 10 minutes to make, and are so filling!

Let us begin!

Quinoa dish 1) Quinoa with chives and soy sauce

This is my Asian take on stir-fried rice. Because quinoa is a great rice substitute, you can sub it out for any rice dish.

– Step 1:

Cook 1 part quinoa to 2 parts water. I use 1 cup quinoa to 2 cups water. Bring to a boil, then cover and let simmer until the water is gone and the little white sprouts begin to show (as pictured above)

Chop up 1/2 cup chives and mix in with the quinoa, along with about a 1/2 tsp of soy sauce, tamari or liquid aminos. Any of these soy sauce variations will do!

And that’s it! You can add so much more vegetables to this, like mushrooms, sprouts, grated carrots, snow peas, etc. But this is just a simple tasty variation. Enjoy!

Quinoa dish #2) “Cheezy” quinoa with mushrooms, green onions and turmeric

This is one of my favorite dishes! I loooove the combination of the veggies and the “cheesy” flavor of the quinoa!

Step 1:

– Bring to a boil 1 cup quinoa along with 2 cups water. Cover then let simmer for about 8 minutes, or until all the water has evaporated and the quinoa has sprouted little white tails

Step 2:

– Remove from heat, then mix in:

– 2 tbsp. nutritional yeast (for more info on what this is, see my article “What In the World Is Nutritional Yeast?”)

– 1/2 tbsp. coconut oil

– 1/2 cup chopped chives

– 1 cup sliced mushrooms

– 1/2 tsp turmeric

– salt and pepper to taste

Once everything is mix in, pour into a bowl and eat! Serve hot for ultimate cheesy flavoring and textures!
