Zucchini Leek Pasta with Marinated Mushroom Sauce

RAWmarkable Zucchini Pasta with Marinated Mushroom Sauce

One of my favorite raw vegan meals! So far it’s a toss up between this one and my RAWmarkable Vegan Lasagna. This meal is packed with protein, vitamins and minerals from the zucchini, leeks, mushrooms and hemp seeds. The list is endless!

There are several steps to this recipe, so let us begin!

First, we are going to marinate the mushrooms for our marinated mushroom sauce. You will need:

– 1 pkg of organic mushrooms, sliced (about 2 cups)

– 1 cup thinly sliced organic leeks

– 1 clove garlic, thinly sliced

– handful of cilantro, sliced

– 2 tbsp balsamic vinegar

– 2 tbsp honey

– 1/2 tsp tumeric

– 1/2 tsp finely ground fenugreek

– salt and pepper

Mix all the ingredients in a bowl and cover. Let sit while the mushrooms marianate for a couple hours. This may seem like a lot of moisture for the mushrooms, but remember, this is the sauce for an entire meal! So it ends up working quite well 🙂

This marinated mushroom sauce can also be eaten as a plain salad too! The taste is incredible on its own!

For the zucchini salad, you will need

–  3 spiralized organic zucchinis, or grated if you don’t have a spiralizer

– 2 handfuls spinach

– 2 tbsp hemp seeds

– 2 tbsp nutritional yeast

Optional: 1 avocado

Put the zucchini and spinach in a bowl. Once the mushrooms have been marianated long enough and are completely saturated in the mixture, pour on top of the zucchinis and spinach. Top with the hemp seeds, nutritional yeast and a sprinkle of tumeric.

Soooo much goodness going on here! Zucchini pasta in all its glory!

Ta daaa! Beautiful salad perfection! The amount of healthy goodness you are getting in this meal is off the charts.

And that’s only 3 of the amazing ingredients! If you want to know more about nutritional yeast, see my blog about it. It’s amazing stuff, and a vegan’s best friend!

Turned my marinated zucchini leek pasta from the night before into a dressing for my spinach and sprout salad at lunch the next day! Genius!

  1. This must be heaven!!! ❤ ❤ ❤
Pleurotus mushrooms are currently being marinated in a psychedelic mixture of green onions, celery (leaves and a small stem), garlic, balsamic vinegar, coconut sugar, turmeric and a spice concoction of my own, because I didn't have fenugreek (black pepper, cinnamon, cloves, cumin, nutmeg, a bay leaf)!!!!!
I literally can't wait to add the zucchini noodles and spinach!!! Oh my goodness, the marinade tasted like heaven!
Because I don't have neither hemp seeds, nor nutritional yeast I'm going to sprinkle some soaked sunflower seeds and I'm definitely going to add the avocado!!!!!!!!

Thank you, thank you, thank you!!!!
